Garden Lites Muffins | How I’m Fooling My Kids Into Eating Their Veggies

At two years old my kids LOVED vegetables. Carrots, green beans, peas – you name it they ate it. To say I I was pretty proud of myself was an understatement. I had heard stories from other moms on how they just could not get their child to even touch a veggie, let alone put it in their mouth. I don’t remember being a picky eater as a child so I was so happy that my kids weren’t either.

And then they turned three.

I’m pretty confident they woke up that morning, had a pep talk, and decided as a whole that they were banning vegetables. From that day on it’s been a struggle to get them to eat the recommended amount of veggies.

Then I found Garden Lites Chocolate Muffins.

They are made up of 33% vegetables.  Zucchini and carrots are the first two ingredients! I knew right then what I had to do to get the kids to eat veggies again – I had to lie (a little white lie) to them. I can’t believe it’s come to this point (they seriously used to eat whatever veggies I put in front of them), but I am so tired of asking them over and over again to eat their veggies.

They were a hit!

In fact, I didn’t buy enough of them. A bit of an argument ensued over who would get to eat the last Chocolate muffin. Then I pulled a box of the Blueberry Oat Muffins from the freezer and basically saved the day. Just call me Wonder Mom or Mom of the Year!

Eat Your Vegetables!

The first ingredient in every Garden Lites product is vegetables. Sometimes they’re hidden, like the carrots and zucchini in the Chocolate Muffins. Eat them for breakfast, as a snack, or dessert and feel good about letting your kids indulge. For me, the best part about them fooling my kids into thinking Garden Lite Muffins are a treat!
